In order to make this recipe for cooking prime ribs, you must first combine the mustard, lemon juice and oregano, and then spread this mixture onto the roast and top with peppercorns. You then place the roast fat side up on a rack in an open pan, and do not add liquid or cover, but rather insert the meat thermometer and cook in a 325F oven until the meat thermometer is 5F below the desired doneness.

Another good recipe for cooking prime ribs is that of the prime rib with wine recipe, whose ingredients are: 2 bulbs of garlic cloves peeled, 1 tsp. salt, 2-1/4 lbs. standing prime rib roast with the fat trimmed in one strip and reserved, 12 bay leaves, 2 cups red wine, and kitchen string. What you do first is preheat the oven to 450F, then puree the garlic in a blender or food processor which is fitted with a steel blade; after this, you add the salt to the garlic and process this into a paste. Then you pat the garlic paste in an even layer over top of the top and sides of the roast, and then place bay leaves evenly over the garlic.

You then place the trimmed strip of fat that you had saved over the garlic and bay leaves, and tie in place with the kitchen string, then sprinkle the entire roast with salt and pepper to taste, and place in a medium-sized roasting pan and pour red wine in the bottom of the pan. Roast for twenty minutes, then reduce the heat to 350F and roast for about 18 minutes per 1 lb. for rare or 22 minutes per 1 lb. for medium done; finally, let stand for about five minutes before carving.
