Pots of better quality have a very hard finish, which is resistant to rust, scratching, fading or peeling. Ironware cooking pots are too heavy and require much extra care while cast iron cooking pots may release some amount of iron into the cooked food, something that can provide benefits in terms of dietary iron release. In addition, iron cooking pots retain their heat even after it is off the heat source and thereby saves energy as well.
Another important and very useful type of cooking pot is a copper based one that is found to be better cookware compared to stainless steel, and which reduces the possibility of being exposed to deadly bacteria such as E. coli 0157. This, in spite of the fact that stainless steel cooking pots are perceived to be more hygienic, but they are prone to being scratched and leaving behind marks which resemble little valleys.
No matter what kind of cooking pots you opt to use, it is essential to always keep them clean, using soap and water, and not rough scouring pads and cleaners. And, except for cast iron cooking pots, new ones are certainly more desirable than old ones, so do not use very old cooking pots.
