For this tofu stir fry recipe, you will need several ingredients. These ingredients include: 2 zucchinis that are 6 inches long, 4 medium carrots, 4 green onions, 1 ? cans of chicken broth that should be 13 ? ounces in size, 2 stalks of celery, safflower oil, 2 teaspoons of cornstarch or arrowroot powder, ground ginger, garlic powder, 2 cups of cooked brown rice, 1 package of chow mein noodles, and 1 package of tofu (the tofu should be cut into ? inch pieces for cooking).

Once you have assembled all of the ingredients needed for this tofu stir fry recipe, then be sure to wash the onions, zucchini, and celery, and thoroughly dry them. Peel the carrots, and cut them into strips that are about 1/8 inch wide and 3 inches long. Cut the celery into pieces that are about ? inch thick, and the same should be done for the green onions. The zucchini should be cut lengthwise in half, and then into slices that are about 1/8 inches thick.

Heat 2 teaspoons of oil in a skillet or a large wok. Be sure that the oil is very hot, but that it does not smoke. Add the celery and the carrots, and use a wooden stir fry spatula to cook the mixture for 3 minutes. Add the onions and the zucchini, and cover the pan, cooking the mixture on medium heat for 1 minute. After than, take the cover off, stir the mixture a bit, and cook the mixture for 1 ? more minutes. After that, the mixture should be taken off of the heat.

Next, pour the chicken broth into a small saucepan. Sprinkle in 1/8 teaspoon of the ginger and the garlic, and some of the arrowroot powder. Stir with a wire whisk to dissolve them into the mixture. Allow the mixture to thicken over medium heat, and the cubed tofu should be added once the mixture is reasonably thick. Continue stirring gently to allow the mixture to thicken and heat over the tofu. Place vegetables into the mixture, and then place the entire mixture onto the brown rice and the cooked noodles.

This is just one of the many tofu stir fry recipes that you could try. For more ideas, consult a cookbook, or the many online websites that offer delicious recipes. Once you have found the recipe that you want to try, make it, and delight in how much your family will enjoy it!
